Breakfast Made Simple: Mason Jar Overnight Oats

Looking for a delicious, healthy and quick breakfast?

These make ahead oats are not only nutrient dense but so easy to make and customize!

For my first stab at these mason jar treats, I decided to go with a pie theme and found an apple and blueberry recipe to follow. What this recipe actually yielded was identical in taste.

The base for each was the same so all I had to change up was the toppings.

Ingredients For Base:

1 mashed banana

1 cup plain, nonfat Greek yogurt

1.5 cups milk of choice

2 TBSP chia seeds

2 cups old-fashioned oats (I used gluten-free)

Cinnamon and pumpkin pie seasoning to taste

Blueberry Pie Topping:

1.5 cups blueberries, microwaved 60 seconds or until berries burst and soften

Apple Pie Topping:

1 apple, diced into small cubes

2 tbsp maple syrup

Cinnamon to taste

Instructions:

Combine all base ingredients in large bowl. Separate into two bowls and set aside.

For blueberry topping – once berries are heated you can then fold them into your base.

For the apple pie topping – add apples, cinnamon and maple syrup to a pan and cook on low until apples soften. Remove from heat and fold into the remaining base.

Fill each mason jar with half of each mixture.

Put in refrigerator overnight.

The next morning I topped mine with fresh berries and a little milk!

I know that these will now be a staple in my meal prep because they were so easy! To make them a more well-rounded breakfast, you can add in a scoop of your favorite protein powder, other seeds, nuts, etc. Be sure to add more milk if you use protein so it’s not too thick.
